Spicy Salmon Lettuce Wraps

Oh boy, these are good. Like, really good. These spicy salmon lettuce wraps tick all the nutrition boxes; we’ve got the omega’s with the salmon, plus the good fats of avocados. Tones of micronutrients from the herbs, greens, and kelp. The gut health friendly sauerkraut is dosing us up with probiotics goodness, and a little bit of heat from the chili flakes is boosting our immune system and revving up our metabolism! Plus, this light meal is a perfect precursor for a slice of half-baked sweet potato brownies!

Spicy Salmon Lettuce Wraps

Ingredients

(serves 1)

  • 1 filet of wild caught salmon

  • 4 large pieces of organic lettuce (I like curly red leaf)

Your toppings:

  • 1/2 an organic avocado

  • organic sauerkraut

  • few pieces of organic parsley

  • one piece of fresh organic dill

  • 1/2 an organic lemon

  • pinch of organic chilli flakes

  • pinch of kelp flakes

  • sea salt


Instructions

  1. Cook your salmon (recipe for my perfectly crispy skin salmon is HERE)

  2. Peel off the crispy skin immediately after cooking your salmon, and set aside (crispy side up)

  3. Assemble your wraps with a layer of salmon, avocado, some fresh parsley and dill, a bit of sauerkraut, a pinch of chilli, and kelp flakes, a sprinkle of sea salt, a squeeze of lemon juice and finally a few pieces of crispy salmon skin (break pieces off using your hands).
